Yes, I know it’s winter. And yes, I know that it’s snowing in parts of the country. But can we just talk about smoothie bowls for a second? Because they are just so colorful and freaking delicious. Think a thick smoothie in a bowl, covered with delicious toppings, enjoyed with a spoon. This is one of my all time favorite breakfasts and making your own version at home is super easy. Sure, you can pay $10 for a fancy acai bowl. They are not hard to come by in Los Angeles. But swapping out the acai for frozen berries makes this breakfast simple and less expensive. I love going to CostCo and stocking up on a few of their giant bags of organic frozen berries. Smoothie bowls for days…sigh.
Very Berry Smoothie Bowl
For this recipe I use soy milk. However, feel free to replace with almond milk or any other milk of your choice! Also, if using a date, it should be soft so it can blend into the smoothie bowl. If the date is tough, run it under warm water to help soften it. This recipe easily doubles if you’re making breakfast to share.
- 1 cup frozen berries
- 1 cup soy milk
- 1/2 frozen banana
- 1 date, pitted (optional, but adds sweetness)
- toppings of your choice: granola, frozen or fresh fruit, almonds, pepitas, honey, nut butter, coconut flakes, chia seeds. Get creative!
- Put the frozen berries, almond milk, frozen banana and date into a food processor or blender. Blend until smooth. The consistency should be similar to sorbet!
- Transfer to a bowl and top with the toppings of your choice. Enjoy!
