We’re knee deep in holiday season (wahoo!). Throughout this time of love and giving, it’s easy to let self care habits fall by the waste side. As we shop for last minute gifts and plan seating arrangements, little things can help us become more mindful and present. This super simple breakfast recipe is a sweet way to sprinkle in a little extra self care. Overnight oats are one of my favorite breakfasts because I feel so taken care of in the morning. By making breakfast ahead, we have more time to enjoy a mindful meal with the people we love!
Apple Pie Overnight Oats
This makes one large delicious breakfast bowl. There is a range in the amount of almonds you can use! This is totally based upon your hunger level. Somedays, 1 tablespoon of almonds is perfect, and on other days I find that my body really needs 1/4 cup. Also, feel free to double, triple, or quadruple the recipe to have some for everyone!
- 1/2 cup oats
- 1 cup almond milk
- 1 apple, chopped
- 1 Tbsp – 1/4 cup raw almonds (see recipe notes)
- 1/2 tsp cinnamon
- 1/4 tsp vanilla extract
- 1 tsp honey
- Place oats, almond milk, apple, almonds, cinnamon, and vanilla extract into an air tight container. Use a spoon to gently mix all the ingredients. Seal up your container and place in the fridge overnight.
- In the morning, pour the mixture into a bowl, drizzle with honey, and enjoy!
